Ingredients
- 250g Flour 00 or plain (or a gluten-free flour
- 150g unsalted butter, softened
- 100g icing sugar
- 2 large Yolks or 3 medium
- 15g Honey
- ½ lemon zest
- Pinch of Salt
- 350g jam
Method
To prepare the jam tart, first mix the butter and flour in a large bowl or an electric mixer, until it resembles fine sand.
Add the yolks, sugar, the pinch of salt, lemon zest, honey and the softened butter. Start kneading with the help of a spatula and then continue with your hands, until it forms a smooth dough.
Cover the dough with cling film and rest in the fridge for 1 hour.
At this point, take the dough again and stretch 2/3 of the dough on floured surface. Butter and flour a 22 round tin with 2/3 of the pastry, pressing it into the dish with your fingertips. Prick the bottom with a fork. Spread the jam evenly over the pastry.
With the remaining dough make some long strips. Lay the strips over the prepared tart to create a lattice pattern.
Bake in preheated oven at 180° C for about 40 minutes or until golden. Let your jam tart cool before serving. Delicious when it is still warm, your family will finish in 5 minutes! ENJOY!
